A delicious and simple version of the classic Indian Tikka Masala, featuring unique Halloumi cheese and aromatic spices in a creamy sauce.

Ingredients

  • 400 g Halloumi cheese
  • 200 g yogurt
  • 1 tsp Garam Masala
  • 1 tsp cumin
  • 1 tsp paprika (smoked or sweet)
  • 1 tsp turmeric
  • 1 tsp coriander powder
  • 1 tsp chili powder (to taste)
  • 1 large onion
  • 3 cloves garlic
  • 1 piece ginger (approx. 2 cm)
  • 400 g tomato passata
  • 200 ml coconut milk
  • Fresh coriander leaves (for garnish)
  • Oil (e.g., sunflower or olive oil)

Instructions

  1. Prepare the marinade: In a large bowl, mix yogurt, Garam Masala, cumin, paprika, turmeric, coriander powder, and chili powder. Cut the Halloumi into cubes and add to the marinade. Stir well and let sit for at least 30 minutes.
  2. Sauté the onion and spices: Heat some oil in a large pan. Sauté the onion until translucent. Add garlic and ginger, and sauté for another minute.
  3. Add the tomato passata: Pour in the tomato passata and mix well. Simmer for about 10 minutes on low heat to develop the flavors.
  4. Fry the Halloumi: In a separate pan, heat some oil and fry the marinated Halloumi cubes until golden brown, about 5-7 minutes.
  5. Incorporate the coconut milk: Once the tomato sauce has thickened, stir in the coconut milk and mix well. Gently fold in the fried Halloumi cubes and simmer for another 5 minutes.
  6. Taste and garnish: Season with salt and freshly ground pepper. Before serving, garnish with fresh coriander leaves.

Notes

Avoid overcooking the Halloumi to prevent a rubbery texture. Allow the marinade to sit for at least 30 minutes to enhance the flavor. Use fresh spices for a more intense taste.
